Our culinary delights and the talented team behind them play a crucial role in creating unforgettable experiences. To showcase this, we created a delectable treat for our guests to enjoy. What could be better than a light, refreshing mousse made with local Nova Scotian apples for a summer treat?

Finding the best Nova Scotian Apples:

Nova Scotia is renowned for its delicious apples, and selecting the right variety can make all the difference in your dessert. We recommend using Gala, Honeycrisp, or Cortland apples for their perfect balance of sweetness and tartness. These varieties are readily available at local farmers' markets and grocery stores throughout Nova Scotia. When selecting apples, look for ones that are firm and free from blemishes to ensure the best texture and flavour for your mousse.

Compote technique:

The Strawberry Rhubarb Compote adds a delightful tartness that complements the rich chocolate mousse beautifully. Start by simmering fresh or frozen rhubarb and strawberries with sugar, lemon juice, and water until the fruit is tender and releases its juices. Creating a slurry with cornstarch and cold water helps to thicken the compote to the perfect consistency. Be sure to whisk the slurry into the simmering fruit mixture and bring it back to a boil, stirring constantly to avoid lumps. Allow the compote to cool completely before storing it in the refrigerator. This can be made ahead of time, making the final assembly quick and easy.

Presentation is key when serving this delightful dessert. To serve, carefully unmold the Apple Chocolate Mousse onto a plate. Drizzle the Strawberry Rhubarb Compote artfully around the plate to create an inviting splash of colour and flavour.
