From Our Kitchen: Grilled Salmon with Warm Mango Salsa

Grilled Salmon Filet with Warm Mango Salsa
Original recipe makes 4 servings
Ingredients
4 (6 ounce) salmon filet
3 tablespoons olive oil
1 large red onion, finely diced
2 cloves garlic, peeled and minced
2 tomatoes, diced
1 sprig fresh cilantro, chopped
2 mangos - peeled, seeded, and diced
Directions
1. Preheat your grill.
2. Brush your salmon filet with olive oil and season it on both side with salt and pepper.
3. Grill salmon filet on both side for 4 minutes, or until you reach a core temperature of 140.
4. Heat olive oil in a medium saucepan over medium heat, and sauté onion until tender.
5. Stir in garlic, tomatoes, and cilantro.
6. Cook until heated through, 1 to 2 minutes, and remove from heat. Mix in the mangos.
7. Serve over the salmon filet.
